The new capability is a boon for iPhone users without the latest models.
Both Color Pop and depth-of-field editing are rolling out to Google's Photos app now and should be available soon. Now, as we have mentioned earlier, the feature has made its way to the GooglePhotos app for iOS.
Unfortunately, that same feature isn't available on the older iPhone models, including the iPhone X. At least, not by way of Apple, anyway. You can also adjust the background blur after the Portrait Mode photo has been captured.
To change the background blur on a Portrait Mode photo, open the picture up in Google Photos, click the editing icon, then tap the editing menu to bring up the focus and depth editing options. This will change the background of an image to black-and-white, while the image in the foreground will be colorful.

Previously the Google Assistant inside Photos would suggest applying this treatment to specific images, but now you can trigger it manually for every single one of them if you so wish.
Along with the ability to alter a photo's bokeh, comes new "Color Pop" functionality as well. Tapping the edit button a second time reveals the depth slider.
The fact that iPhone 7 or 8 users can depth edit their photos - just not within an Apple product - is not the greatest look, especially when it is Apple rival Google that's offering the technological upgrade.
